INGREDIENTS:

4 bell peppers, any color

2 tbsp olive oil
-
1 lb Wagyu Ground Beef

1 medium onion, diced
-
3 cloves garlic, chopped
-
1½ cups cooked rice
-
2 cups marinara sauce, divided
-
½ cup fresh parsley, chopped
-
1 cup shredded cheese (pepper jack, mozzarella, munster)
-
Kosher salt & pepper to taste
DIRECTIONS:

Preheat oven to 350°F.

Cut tops off peppers and remove seeds.

In a skillet, heat 1 tbsp oil and cook beef until mostly browned. Season and set aside.

Add remaining oil. Cook onion and garlic until soft.

Stir in rice, 1 cup marinara, half the parsley, half the cheese, and cooked beef.

Fill peppers with mixture.

Top with remaining sauce and cheese.

Cover with foil and bake 20 minutes.

Uncover and bake 15–20 minutes until peppers are tender and cheese is browned.

Garnish with remaining parsley and serve.
