INGREDIENTS:

2 lbs Wagyu skirt, flank, ribeye, strip, sirloin, or short ribs
Jerk Marinade:

4 scallions, chopped

¼ onion, chopped

1 tbsp thyme
-
1–2 habaneros or jalapeños, seeded

4 cloves garlic
-
1-inch fresh ginger
-
¼ cup soy sauce
-
Juice of 1 lime
-
2 tbsp brown sugar
-
2 tbsp honey
-
½ tsp allspice
-
½ tsp cinnamon
-
Salt & pepper
DIRECTIONS:

Blend all marinade ingredients until smooth.

Marinate Wagyu 2–4 hours.

Preheat grill or skillet to high heat.

Sear 3–5 minutes per side (depending on thickness).

Rest 5–10 minutes.

Slice thinly and serve.
