Fire, spice, and sweet heat come together in this Caribbean Jerk Wagyu recipe. Perfect for grilling, this bold marinade caramelizes beautifully over high heat, creating a smoky crust that locks in the rich, buttery flavor of Wagyu. Serving 4–6, this vibrant dish turns any weeknight into a tropical escape.

INGREDIENTS:

  • 2 lbs Wagyu skirt, flank, ribeye, strip, sirloin, or short ribs

Jerk Marinade:

  • 4 scallions, chopped

  • ¼ onion, chopped

  • 1 tbsp thyme

  • 1–2 habaneros or jalapeños, seeded

  • 4 cloves garlic

  • 1-inch fresh ginger

  • ¼ cup soy sauce

  • Juice of 1 lime

  • 2 tbsp brown sugar

  • 2 tbsp honey

  • ½ tsp allspice

  • ½ tsp cinnamon

  • Salt & pepper

DIRECTIONS:

  1. Blend all marinade ingredients until smooth.

  2. Marinate Wagyu 2–4 hours.

  3. Preheat grill or skillet to high heat.

  4. Sear 3–5 minutes per side (depending on thickness).

  5. Rest 5–10 minutes.

  6. Slice thinly and serve.
