This cut comes from an arm roast that has been sliced into steaks. With other cattle breeds, it's usually kept whole as a roast or turned into ground beef. We like to slice our Platinum Label arm roasts into steaks to provide customers with another steak option featuring great value for the price. Marbling makes all the difference with this cut.
